Zucchini Casserole
1/4 cup Onion1 can Cream of cheddar soup1/2 cup Melted butter9 Medium Zucchini and /or squash, sliced and halved1 cup Sour creamBread crumbs/ stuffing mix.Boil Zucchini/squash and onion together in salted water for 5 minutes;drain.Combine soup, sour cream and cheese. Add zucchini and onions. Sprinkle stuffing on bottom of greased casserole dish; pour zucchini mixture on top.Cover with bread crumbs/stuffing mix and melted butter, if desired. Bake at 350 for 30 minutes or until bubbly. * For larger zucchini and squash, use less.
